Ground Pork with Chilies and Carrots
People often disregard the potential of ground meat, thinking that it is somehow below their station or only used at Taco Bell. Here in the Gradspot kitchen, we realize that it is a) cheap and b) damn tasty. We've discussed turkey pretty often, so the time for pork is now. Beef is just too common, and we all sneak in a Donald's trip once in a while, so at home change is a blessing. Like turkey, ground pork is super versatile. This recipe is quick and simple—perfect for the weekday rush.
You need:
- 2 carrots
- 1 lb. ground pork
- 3 cloves garlic
- 2 serrano chilies
- Rice
- Olive oil
- Salt, pepper
- Lime
Shred carrots, slice garlic, and dice chilies. In a heavy skillet, heat olive oil. Add carrot, garlic, and chilies. Cook until carrots soften and begins to caramelize a bit. Add ground pork, then season with salt and pepper. Sauté until pork is cooked through. Make sure all ingredients are tossed thoroughly. Squeeze the juice of one lime over skillet. Serve with steamed rice.
