Chipotle Chicken Burgers
Summer might have ended, but the weather is still conducive to lighter, hand-held meals. While pork and beef burgers are an all-year affair, poultry doesn't have the same satisfying bite throughout the winter that it does in the warmer months. Turkey and chicken, your time is near! Canned chipotle peppers in adobo sauce are perfect for adding some panache to simple ground chicken—a bit of smoky flavor and just the right heat kick. Preparing the meat mixture in advance allows the chicken to soak up the ingredients, increasing the chance of a delicious burger. But if you forget to do it in the morning, mixing everything together right before you cook is also fine.
You need:
* 1 can chipotle peppers in adobo (any quality supermarket should have this, or else find your local Mexican market)
* 1 lb. ground chicken
* 2 cloves garlic.
* Burger buns/rolls
* Montreal seasoning
Preparation:
Combine chicken with finely chopped garlic and three diced chipotle peppers. Add 1 tbsp. of adobo sauce and a few healthy shakes of Montreal seasoning. Allow to rest and infuse (stick it in the fridge before work if you think of it).
When you're ready to cook, form four equal size burgers. Cook on the grill, in skillet with oil, or under the broiler. Take care to cook through, as this is chicken not beef.
Serve on rolls with a little mayo. Some rocket goes a long way in classing it up. Kettle chips are also a fine accompaniment.
